Quick Cait Update
So today marks my 3rd week of Keto. I survived the Keto Flu (yay!); the most prominent symptom for me was moderate exhaustion. I just felt completely drained for a few days. But now I feel awesome! I’ve never had this much energy.
My appetite is also definitely suppressed and I can already see results! I am excited to continue seeing definitive results in the upcoming weeks.
Now, as I mentioned in my previous post, Keto is a diet that encourages you to eat a lot of good fats. This means eating a lot of my favorite foods like avocados, fish, bacon, and butter (score!).
My boyfriend and I have only been doing this for 3 weeks and I’ve already made this week’s recipe twice! It’s a delectable Chicken Breast with Herb Butter recipe from DietDoctor (a Keto recipe godsend).
And oh my goodness…I’m sure by the time this is posted I will have already made, or will be planning to make it again, this week.
The recipe doesn’t specify, but I highly recommend using a cast iron skillet to cook the chicken. We recently got a nice cast iron skillet (thanks to my awesome Maw Maw) and it really makes all the difference. I had been using a cheap pan that probably came in one of those $20 bundle boxes 10 years ago; while it did the job, chicken tasted nothing like it did coming out of the skillet. Just my two cents. You could also probably bake these in the oven and they would come out great, too!
